My First Meal in Peru!

What do you think of when you hear Peruvian cuisine. Well let me tell you, I had no idea simple ingredients could be so delicious and used in so many ways! Peru is a very special place when it comes to gastronomy. Due to there various geographic areas the coast, highlands, and the jungle. Peru has been able to create a diverse, unique, and complex pallet of flavors in their traditional dishes.
Fresh fruits from all the areas of Peru! Passion fruit, avocado, oranges, papaya, mango, lucuma, chirimoya (ice cream fruit), bananas, and many many more! Vendors are selling fruit juices, picarones ( doughnuts), anticuchos (cow heart's on skewers), empandas and many more delicious foods. All of these amazing snacks for no more than a couple of dollars! I will definitely be coming back here for more food.
Almost every dish has quinoa and or a type of Peruvian cereal, there is also over 4,000 types of potatoes so just imagine how many different types of dishes you could create with potatoes. The Peruvian national dish is Ceviche, fish that is cooked with only lime juice! How amazing and delicious does that sound. We had the opportunity to meet the Chef from Yuraq Restrobar, and he created this traditional Peruvian dish for us right at our table. If you ever find yourself in Cusco, this is a great place to start your journey with Peruvian cuisine.
Ceviche recipe
Ingredients: Preparation: 1) Slice fish into 1/2 in slices, place in metal bowl with a couple pieces of ice
Fish fillet (1) 2) Add a pinch of salt (salt the fish directly ), add pepper
Lime (3) 3) Add red onions, stalks of cilantro, ginger
Red onions (1/5th) 4) Squeeze limes into the bowl, add milk, then mix!!!!
Cilantro (1 tbsp minced/ 3 stalks) 5) Add a bit more salt to liquid and stir again.
Ginger (1/2tsp minced) 6) Remove ice cubes from the bowl, and the stalks of cilantro
milk (1/3 cup) 7) Serve fish on a dish and sprinkle the minced cilantro over the fish
Salt 8) ENJOY!!!
